BI304: Human Nutrition

Opportunities are available at Palolo Elementary, Aliiolani Elementary, HCAP’s Kupuna Independent Life Series, Lanakila Senior Center, and Papakolea’s Lamaku & kupuna programs. Each site has different needs and different instructions below.

Palolo Elementary’s Science Curriculum: Nutrition Lessons

Location

2106 10th Avenue, Honolulu, HI 96816

The school’s parking lot may be full, so plan for extra time to find street parking along 10th Avenue or Kiwila. There may also be parking in the school’s side lot, off of Kiwila. Consider dropping off a team member with all your materials, then finding parking.

Key Information

The students at Pālolo Elementary School are focusing on STEM education. Most of the keiki live in the housing area near the school. Many qualify for free/reduced lunch and do not speak English at home. Two examples that demonstrate the need for your special lessons:

  • The younger keiki did an activity that revealed their belief that spam musubi, saimin and chips are a food group. They eat these foods often.
  • Although the cafeteria serves wonderful healthy meals, much of it goes to waste. Many of the keiki (all grade levels) refuse to eat their food because it’s unfamiliar and perhaps they don’t understand the benefits of the food being served.

As BI304 volunteers, you can help teach the keiki as guest instructors in the classroom. Sessions should be 45 minutes to one hour long (unless otherwise noted). Please address the questions, “Why should we care about nutrition? What are the benefits of healthy foods? What are the negative effects of unhealthy foods? How can we make healthy food choices?”

Additionally, teachers have provided specific guidelines on the aspects of nutrition that they’d like you to cover. These are listed in the spreadsheet (portal login required). Please be interesting, fun and try to use interactive lessons that engage the kids.

Get Started

Step 1: Form a team of two (unless otherwise noted). Determine your team’s availability to orchestrate your lesson & activities in the classrooms. See the times/dates available in the spreadsheet (portal login required), and note the presentation #s in the “Doodle Choice” column in the spreadsheet. On Doodle, find the presentation # of your choice and enter the first & last names of ALL members of your team. SIGN UP FOR ONE OPTION ONLY. Sign up on/before the day of our in-class discussion about service-learning. (Any date you see in Doodle is irrelevant. Look for presentation #s only; each one corresponds with the spreadsheet.)

Step 2: After receiving an email confirmation for your assigned option, complete the BI304 Connection Form. Submit to Hale Hoaloha, room 104 inbox by September 13, 2018. ALSO: If your choice includes options (highlighted in yellow), send the specific date and time when you’d like to do your presentation to [email protected] for scheduling. Send this email by September 13, 2018. The school will confirm scheduling through the SL Office.

Step 3: Use the “key info” above, plus your Pālolo teacher’s information on the spreadsheet as guidelines for developing the content for your presentation and activities. Decide what info to share, and how you’ll do so. Include all of this info in an outline.

Remember that this pre-workshop outline is part of the basis for validating your service hours.

Outlines should be done in standard form. Details are important. We need to see that the specific content you are choosing to cover is engaging, age-appropriate, and sensitive to the site’s requests. Email your outline to [email protected] and to your professor, AT LEAST TWO WEEKS BEFORE YOUR SCHEDULED PRESENTATION DATE. Be ready to adapt your plans, based on the feedback you may receive.

Step 4: Arrive early to your presentations. Bring your timesheet/eval form for the teacher to fill out. If there are any emergencies or last-minute questions, you may try to contact your teacher through the Palolo Elementary main office at (808) 733-4700. The Chaminade Service-Learning Office may also be able to help.

Step 5: Save all of the materials you create for your activities. Along with your outline, these deliverables will be used to assess your work on this project. Turn them in to Hale Hoaloha, room 104. IF they are larger than a file folder, submit them to the School of Nursing Office in Henry Hall, room 110. Explain that you’re submitting “BI304 service-learning materials.” These may also be chosen for exhibition on campus.


Aliiolani Elementary: Nutrition Lessons

Location

1240 7th Avenue, Honolulu, Hawaii 96816
Enter the Aliiolani parking lot on 6th Avenue (near Waialae Ave.). The first parking area is for staff, so go through the gates and park in the visitor lot near the cafeteria. All volunteers should arrive EARLY and check in at the main office, which is located on the Diamond Head side of campus (with doors facing mauka). Explain which teacher you’re going to see; you will be directed to the right building/room.

Key Information

As BI304 volunteers, you can help teach the Aliʻiolani keiki as guest instructors in the classroom.  Please be interesting, fun and try to use interactive lessons that engage the kids.

Aliiolani’s leadership has shared that kids will discard their made-from-scratch, healthy cafeteria lunches. We need to motivate and educate the kids, encouraging them to appreciate the awesome lunches they’re served. Also, teachers have requested lessons that address the Hawaii Content & Performance Standards in the area of health (ie: Explain “good nutrition” or “a healthy diet.” Why is it important? Consider health promotion and disease prevention.) Special-focus requests are included with scheduling info in the spreadsheet (portal login required).

Step 4: Arrive early to your presentations and check in using the directions above. Find your teacher’s classroom. Bring your eval. form for the teacher to fill out.

Step 5: Save all of the materials you create for your activities. Along with your outline, these deliverables will be used to assess your work on this project. Turn them into Hale Hoaloha, room 104. If they are larger than a file folder, submit them to the School of Nursing Office in Henry Hall, room 110. Explain that you’re submitting “BI304 service-learning materials.” These may also be chosen for exhibition on campus.


HCAP Kupuna Independent Life Series: Moiliili Site and Iwilei Site

Location:

Moiliili Site: Moiliili Community Center, 2535 S. King Street, Honolulu, HI 96826
There are two designated parking lots for MCC. One is the parking lot in the back of the thrift store, and the other is the gravel lot, directly across. There should be a security guard to direct you to an assigned parking stall, and then show you which classroom to go to.

Iwilei Site: Iwilei Senior Homes, 888 Iwilei Road, Honolulu, HI 96817
Park in a visitor stall in the front of the building. Call Melani at (808) 354-8844; she will come down to open the door and escort you to the Lounge Room across their laundry room.

Key Information

The Honolulu Community Action Program (HCAP) hosts a program called the Kupuna Independent Life Series. Its aim is to:

  • engage seniors in health education
  • provide a platform for understanding health issues
  • create a positive atmosphere for socialization

A key component of the program is community advocacy in healthcare and the ability of seniors to understand how they can improve their quality of life by educating themselves. Sessions are held once a week. Elders participate in activities such as exercise, health-related and interactive workshops, current issues and social forums, free meals, nutrition classes, support groups and crafts.

Get Started

Step 1: Form a team of two. Determine your team’s availability to orchestrate your lesson & activities. Two successive lessons are requested; please pick ONE. See spreadsheet (portal login required) for dates, times and topics. Note the presentation #s in the “Doodle Choice” column in the spreadsheet.

Step 2: On Doodle, find the presentation # of your choice, and enter the first & last names of both team members. SIGN UP FOR ONE OPTION ONLY. Nutrition & Health at Lanakila Senior Center

Location:

1640 Lanakila Avenue, Honolulu, HI 96817
Park in any stall fronting the center. The others are for the Public Housing Offices; do not use those stalls. Upon entering the main doors, you’ll see a check-in counter; introduce yourself to whoever is staffing the counter.

Key Information

The members of Lanakila Senior Center are active and engaged; most come to the Center on their own, to attend the activities they are interested in. Offerings range from ukulele classes to Tai Chi.

The Center has provided specific guidelines on the aspects of nutrition that they’d like you to cover. These are listed in the spreadsheet (portal login required), along with dates & times. PLEASE be interesting, fun, and try to use interactive lessons that engage the seniors. It’s our first time partnering with the Center in this way, so let’s make an awesome first impression!

Nutrition & Health in Papakolea

Location:

2150 Tantalus Drive, Honolulu, HI 96813
Workshops will take place in the building at Papakolea Community Park.

Key Information

Continue your relationship with Papakolea. All presentations should educate about nutrition, its relation to health concerns, and how to make healthy choices.
Keiki in the Lamaku after-school program will be in groups (grades K-2 and grades 3-5). Evening sessions are for kupuna and caregivers. All sessions involve a recipe demo and Papakolea will help to fund the purchase of ingredients.

These sessions on nutrition, cooking, & health should include local foods. For example, you could present info about the health benefits of kalo, interesting facts about the plant & the way it has been used, and information about the health conditions it may play a role in addressing (eg: substituting white bread for kalo has glycemic implications, and these are connected to diabetes…)

Step 5: The Service-Learning Office will disseminate one gift card per team, to help fund the purchase of ingredients. Save all receipts and return them to Papakolea when you finish your presentation, along with any remaining balance on the gift card. Prepare materials and ingredients ahead of time. If you want to actually cook on-site, you will need to confirm the availability of the kitchen ahead of time, and/or be prepared to bring a hot plate. Arrive early to your presentations.
